Removal and placement on the tray is carried out with the help of a
carrier integrated into the drawer. When the carrier is lifted out of
the drawer, the lye dough pieces are lifted off the leaching grid and
can be conveniently placed on a baking tray.
There is no possibility for the operating staff to come into contact
with the lye at any time! The lye circuit is fed from a swap tank. A
suction pipe and a return hose are inserted into the swap body. After
about 3000 pretzels, the lye is used up. The caustic solution is
changed by simply replugging the suction pipe and drain hose into a
new drum. The swap bodies are tightly screwed together and can
therefore be safely transported back to the bakery, washed out and
refilled.
There is therefore M51232589 no need to change pretzels in the store.
Dough sludge residues are deposited at the bottom of the swap tank.
The leaching device rinses itself with each leaching process. This
device can be used to lye all kinds of pretzels, e.g. pretzels,
pretzel rolls, pretzel croissants. The small space requirement and the
absolutely encapsulated design allow safe and clean work.
