TECHNOLOGICAL SPECIFICATION (MAIN MODULES):
Section 1: Preparation of cheese milk:
o Milk repasteuriser with a capacity of 15 m³/h.

Section 2: Preparation of cheese curds:
o Cheese boiler with a capacity of 12 m³.
o Hot water generator for boilers.
o Process water pasteuriser (5 m³/h) with a 10 m³ tank.
o Set of process pumps (whey, curd) with a capacity of 25 m³/h each.

Section 3: Cheese room – Moulding and pressing:
o Curd buffer tank (10 m³) with pump.
o Under-mould forming device (UFP) for Dutch cheese.
o Complete mould circuit (300x500x100) with cover applicator and remover.
o Final pressing system: 144 pressing points.
