TEWES-BIS Production line for yellow cheese

Used complete production line for yellow cheese, made by TEWES-BIS Poland. New 2019.

Production line for yellow cheese, e.g. Gouda, Edam, Dutch type.
Daily capacity: Processing up to 180,000 litres of milk per day.

TECHNOLOGICAL SPECIFICATION (MAIN MODULES):
Section 1: Preparation of cheese milk:
o Milk repasteuriser with a capacity of 15 m³/h.

Section 2: Preparation of cheese curds:
o Cheese boiler with a capacity of 12 m³.
o Hot water generator for boilers.
o Process water pasteuriser (5 m³/h) with a 10 m³ tank.
o Set of process pumps (whey, curd) with a capacity of 25 m³/h each.

Section 3: Cheese room – Moulding and pressing:
o Curd buffer tank (10 m³) with pump.
o Under-mould forming device (UFP) for Dutch cheese.
o Complete mould circuit (300x500x100) with cover applicator and remover.
o Final pressing system: 144 pressing points.
o Tunnel mould washer and mould rotator.
o Cheese marking device.
Section 4: Cheese salting room:

o Conveyor system for feeding and removing from the salting room.
o Brine tanks with service platform.
o Brine buffer tank with a capacity of 50 m³.
o Salt dissolving device and brine filtration system.

Section 5: Control and Additional Equipment:
o Cheese slicer after salting and cheese scales.
o Metal detector (product safety).
o Container washing station (CIP) – two-track, two-phase with disinfection.
