The line includes: - Tank for preliminary pressing of cheese curd - LT150 thermizer - Molds for shaping the curd - Chilled water tanks - Brine tanks - Tube heat exchanger for cooling brine Cheese curd plasticizing set consisting of: Tanks for pre-pressing cheese curd with an automatic device for cutting into small portions. The prepared cheese curd is fed into the thermizer for plasticization. The plasticized mass is manually formed into cheese molds. The portions prepared in this way, packed in molds, are cooled in an ice water tank. After cooling, they are removed from the molds and placed in brine tanks. After salting, the mozzarella blocks are sent to a ripening room with specific temperature and humidity parameters.
