On the other hand, and as a consequence of the depression created and the extraction of intermolecular air, there is a great absorption of liquids and additives in suspension, an increase in density and a rapid obtaining of albumin, resulting in a greater binding of the mass, an acceleration of drying in the curing sausages, a reduction in waste and oxidation and ultimately a longer commercial life of the sausage. All parts of the machine in contact with the paste, as well as the entire bed, are made of stainless steel and the lid of the tank in transparent methacrylate. The filter of the vacuum circuit I4461368 is located in the same lid of the tank, preventing the entry of dirt into the internal vacuum ducts. The working vacuum can be graduated from 0 to high vacuum. The operation of the machines is hydraulic. The blade shaft is driven by a powerful hydraulic gear motor. The choice of the necessary work process is carried out simply. Also, the lid and the tank are driven by hydraulic cylinders.
