Fully reconditioned Stephan universal machine for producing processed
cheese, convenience products, vegan spreads and confectionery.
Formerly used in melted and cream cheese production (also vegan).
Machine bowl with top slide and a bottom valve. Framework, lid and
side covers are all made of stainless steel. The bowl is equipped with
a single jacket including all valves, 4x direct steam nozzles for
direct injection of (culinary) steam into the product, temperature
sensor in the product, 3x double cutting knives, max. working pressure
in the bowl -1 / 0.3 bar (protected with pressure relief valve),
maximum temperature in the bowl 95 °C, bowl volume: 300 liters, 1x
hydraulic inlet slider at the top for the main product, including
large funnel, 1x outlet valve at the bottom for the outlet of the
finished product, 1x connection for pneumatics controlled ingredient
valves on the side of the bowl (excluding pneumatic valve) and 1x
connection on top with vacuumtank. Single jacketed lid with scraper on
the wall (electric drive ± 25 rpm), 2x manual tension clamps. Main
engine for the 3x cutting blade: 400 volts - 50 Hz - 40 / 60 kW -
2-speed motor - 1.485 / 2.950 rpm. Hydraulic system to control the
hydraulic slides. Liquid ring vacuum pump. New free standing stainless
steel control panel with Siemens S7-1500 PLC control and Siemens
Simatic touch screen HMI. The PLC is pre-programmed. Elevator for
loading the Stephan machine with standard Normcar carriages made of
